Air Fryer Pork Chops

Air Fryer Pork Chops

Perfect Air Fryer Pork Chops with Smoky Spice Rub

Thick-cut bone-in pork chops get a generous coating of earthy spices before hitting the air fryer, where they develop a beautiful crust while staying incredibly juicy inside. The secret is the mustard powder — it adds depth without overpowering the pork's natural flavor.

Ingredients

  • 3 bone-in pork chops, 1.5-2 inches thick (center-cut preferred)
  • 1 tsppaprika
  • 1 tspkosher salt
  • 1 tspfreshly ground black pepper
  • 1 tspground mustard
  • ½ tsponion powder
  • ½ tspgarlic powder
  • 2 tbspextra-virgin olive oil

Instructions

  1. Get your air fryer heated to 400°F. If it doesn't have a preheat function, just run it empty at 400°F for 5 minutes to bring it up to temperature.

  2. Combine all the spices in a small bowl and whisk them together. The mixture should smell warm and earthy — that mustard powder really makes a difference.
  3. Drizzle the olive oil over both sides of the pork chops, then massage the spice mixture into the meat with your hands. Press firmly to help it stick — you want an even coating on every surface.
  4. Arrange the pork chops in the air fryer basket with space between them — they shouldn't touch or overlap. Cook for 10-12 minutes, checking with an instant-read thermometer for an internal temperature of 145°F.

  5. Transfer the chops to a cutting board and let them rest for 3-5 minutes. This allows the juices to redistribute, ensuring every bite is tender and moist.
